Almond Bread
Makes 1 loaf

3 eggs, beaten
1/2 c sugar
1/4 tsp Almond extract
1 tsp vanilla
2 tsp baking powder
1 1/2 c flour, sifted
1/2 c blanched almonds -- chopped

Add sugar and almond extract to the beaten eggs and beat well. Stir in flour and baking powder. Blend in the chopped almonds and mix well. Place in a greased loaf pan and bake 45 minutes in a preheated 375 degree F oven. Frost with a powdered-sugar glaze if desired.
