Apple Bran Muffins
2 c whole bran cereal shreds
2 1/2 c buttermilk
1/2 c vegetable oil
2 eggs
2 1/2 c all-purpose flour
1 1/2 c sugar
1 tsp cinnamon or apple pie spice
1 1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 c chopped apples

Heat oven to 400 degrees. In large bowl, combine cereal and buttermilk. Let stand 5 minutes or until cereal is softened. Add oil and eggs; blend well. Stir in remaining ingredients and mix well, taking care not to over mix. Line muffin cups with paper cups or grease well. Spoon by tablespoons into muffin cups until 3/4 full. Bake in preheated oven for 18-20 minutes or until pick inserted in center comes out clean. Serve warm or at room
temperature. Makes 24-30 muffins.
