Carrot Bread
3/4 c sugar
1/4 c brown sugar
3/4 c oil
2 c flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
2 eggs
pinch of salt
1 1/2 c grated carrot
1/2 c chopped pecans (optional)
1/2 tsp vanilla
Preheat oven to 350 degrees F. Beat the sugars and oil. Add flour, baking powder, baking soda, cinnamon, and salt into bowl, stir to combine. Beat eggs and mix into batter. Fold in carrots, pecans and vanilla. Bake in 9x5 loaf pan, which is greased and floured. Bake 60 minutes.
