Chai Tea Loaf
1 c  brewed Chai tea
3/4 c raisins
3/4 c craisins (dried cranberries)
1 c sugar
1 egg
1/4 c grapeseed oil
2 c flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
cooking spray

The night before: put brewed Chai in a large bowl along with dried fruits and sugar. Let stand covered overnight. The next morning: Beat egg and grapeseed oil together and stir into Chai/fruit mixture. Combine remaining ingredients. Add to fruit batter; stir until blended. Spoon into a loaf pan coated with Cooking Spray. Bake at 350ºF/180ºC for 50 to 60 minutes. When loaf is done, turn out, slice and serve hot.
