Easy Zucchini Bread
3 Eggs
1 c Oil
2 c sugar
2 tsp vanilla
2 c grated zucchini
3 c flour
1 tsp baking soda
1 tsp salt
3 tsp cinnamon

Mix wet ingredients in a bowl.  Add dry ingredients.  Stir until moistened.  Pour into 2 greased and floured (or sprayed with non-stick cooking spray) 5x9 loaf pans.  Bake at 325 degrees for 1 hour or until toothpick comes out clean.  Cool in pan until you can touch, then cool competely on wire rack.  Freezes very well.
