Green Onion Spoon Bread
2 tbs butter
1/2 c flour
1 tsp salt
3/4 c cornmeal
2 tbs sugar
1/2 tsp pepper
6 eggs, separated
1 1/2 cups milk
1/4 c melted butter
1 c finely diced green onions

Preheat oven to 375 degrees. Prepare 3-quart souffle dish by brushing with 2 tablespoons butter. Combine dry ingredients in bowl. In another bowl, combine egg yolks, milk & butter; pour egg mixture into dry ingredients. Stir to combine but do not overmix. Fold in chopped green onions. Beat egg whites to firm peaks in a bowl. Fold beaten whites into cornmeal mixture & pour batter into buttered dish. Bake for 1 hour.
