Herb Brown Rice Muffins
1 c cold cooked brown rice
3 tbs oil
2 eggs
2 c flour
1/2 tsp salt
4 tsp baking powder
1 c milk
1/4 tsp basil
1/4 tsp marjoram
1/4 tsp oregano
1/4 c grated parmesan cheese

 Preheat oven to 400F, prepare pans. Combine rice, oil, eggs, milk, cheese and herbs. Sift dry ingredients and add to wet mix until just combined. Spoon into pans and bake for 20-25 mins. Makes 12 muffins.
