Ice Cream Muffins
1 1/2 cups self raising flour
2 cups any flavor ice cream
1 egg, beaten
2 tablespoons oil

Preheat oven to 430F and prepare pans. Sift flour into bowl, soften ice cream but do not allow to melt completely. Stir into the flour quickly. Do not overmix. 3/4 fill pans and bake for 15-20 mins.
