Mocha Muffins
1 3/4 c flour
3/4 c sugar
2 tbs cocoa
2 tsp instant coffee
2 1/2 tsp baking powder
1/2 tsp salt
1 c milk
1/2 c butter, melted
1 egg, beaten
1 tsp vanilla
1/2 c mini chocolate chips
1 tbs sugar mixed with 1/2 tsp cocoa

Preheat oven to 375. Grease 12 muffin cups or line with paper liners. Combine flour, sugar, cocoa, coffee, baking powder, and salt in a large bowl. In another bowl, combine milk, butter, egg, and vanilla; whisk
until well blended. Pour into flour mixture and stir until just blended. Stir in chocolate chips. Evenly fill prepared muffin cups. Sprinkle sugar-cocoa mixture over top. Bake for 15 to 18 minutes or until muffins test done. Let muffins cool in pan on wire rack.

Yield: one dozen
