Peach Butter

18 medium peaches, peeled, pitted, and cut into small pieces
4 c sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
1/2 tsp ginger

Put all ingredients in a large pot.  Bring to a light boil.  Simmer very slowly, stirring often, for 3 hours or until thickened.  Spoon into sterilized 1/2 pint canning jars.  Process in boiling water bath for 10 min, let cool, and seal.
