Buttermilk Cornbread
1 c yellow cornmeal
1 c all-purpose flour
1/4 c sugar
1 tbs baking powder
1/3 c applesauce
2 egg whites
1 c buttermilk
Preheat oven to 400 degrees. Lightly coat 8-inch square baking pan with nonstick vegetable spray. In large bowl, combine cornmeal, flour, sugar and baking powder; set aside. In medium bowl, mix applesauce, egg whites and buttermilk. Stir into dry ingredients until just blended. Pour into prepared pan. Bake 25 minutes in preheated oven or until golden and toothpick inserted in center comes out clean. Serve warm.
