Chocolate Zucchini Bread
3 eggs
2 c sugar
1 c vegetable oil
1 tsp vanilla
2 c grated zucchini (not peeled)
2 oz unsweetened chocolate, melted
2 c flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 c semisweet chocolate chips
3/4 c walnuts (chopped)
In a large mixing bowl, combine eggs, sugar, oil, and vanilla. Beat with mixer on low speed until blended. Add zucchini and melted cooled chocolate; stir.Sift together flour, baking soda, salt and cinnamon. Add dry ingredients, chocolate chips and nuts to egg mixture. Stir just enough to blend in the dry ingredients.Pour the batter into a greased and floured 9 x 5 loaf pan. Bake in a preheated 350 degree oven for 60-70 minutes.Cool in pan on wire rack for 10 minutes; turn out of pan and cool on rack.
