Irish Barmbrack
1 c hot, strong tea
1/2 c chopped dates
1/2 c chopped mixed peel
1 c seedless raisins
1 c brown sugar
1 egg, beaten
2 c flour
1/4 tsp baking soda
1/4 tsp salt
1 tsp baking powder
Pour tea over fruit and sugar & let stand overnight. Sift together and stir in egg, flour, soda, salt and baking powder. Turn into greased loaf pan, bake at 300 F. 90 min. Turn on rack to cool.
Best the next day.
