Lemon Bread
1/2 c butter, softened
1 c sugar
2 eggs
2 tbs lemon juice
1 tbs grated lemon rind
1 1/2 c flour
1 tsp baking soda
1/8 tsp salt
1/2 c milk
GLAZE:
2 tbs lemon juice
1/2 c confectioner's sugar
Cream butter and sugar. Beat in eggs, lemon juice and rind. Combine dry ingredients. Stir into creamed mixture alternately with the milk. Pour into a greased loaf pan and bake at 350 degrees for 45 minutes. Remove from pan and drizzle with glaze immediately.
