Tuscan Bread
1 tbs oil
2 c flour, divided
1/2 tsp salt
2 tbs yeast
2 tbs sugar
1 c water
Coat the inside of 4 small loaf pans with oil. Preheat oven to 350F. In a mixing bowl, combine 1 c. flour, salt, yeast, sugar and water. Gradually add the remaining 1 c. flour. Lay a kitchen towel on the counter or table where you are working. Place dough on towel. Shape dough into a square; cut into fourths. Knead each piece into a round ball. Spray with oil and set in a warm place to rise. Place in pans; bake for 35-45 minutes. Makes 4 small loaves.
