Whole Grain Irish Soda Bread
2 c whole wheat flour
1 c white flour
1/4 c wheat germ
1/4 c brown sugar
1 tsp salt
2 tsp baking soda
2 tsp baking powder
1 1/2 c butter milk
2 tbs melted butter
3/4 c currants or raisins (optional)
Stir together flours, wheat germ, sugar, salt, baking soda, and baking powder. Stir in buttermilk and butter until blended but still lumpy. Fold in currants or raisins. Spoon dough into a well greased 8 or 9 inch round cake pan, leaving the top lumpy. Bake at 425 degrees F for 30 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes, then turn out on wire rack.
