Zeppole
1 pkg yeast
1/8 tsp salt
1/8 tsp sugar
1 c warm water
1 1/4 c flour
1 1/2 c corn oil
confectioner's sugar
Dissolve yeast, salt and sugar in water, stir in flour, blending well. Cover and let rise in warm area 1 1/3 hours or until bubbly and double in size. Heat oil in a shallow fry pan (six inches in diamater and one inch deep) to 375. Drop by level tablespoons four at a time, fry each side two minutes of until Golden Brown. Drain well on paper towels, and sprinkle with confectioner's sugar. Serve warm.
