(Ingredients make three 1lb loaves)
3lb organic flour
1 c warm water
3 tsp salt
4 tsp dried yeast
4 tsp honey
3 tbs oil (vegetable or olive)
Warm the water. Add one cupful of the water to the yeast and honey and mix. Leave until it becomes frothy. Mix the flour and salt in a large bowl. Add the frothy yeast, the rest of the water and the oil. Mix and knead in the bowl until a good dough ball is formed. Cover and leave in a warm place for an hour or until the ball is roughly twice it's original size. Then knead the dough vigorously for a couple of minutes and place in three suitably
sized baking pans. Leave for approx. 20 minutes to allow them to rise again. Score the top of the loaves to allow rising in the oven. Place in a pre-heated oven of 425 degrees and bake for 25-30 minutes or until the loaf sounds hollow when tapped lightly.
